Dinner

I've been terrible about posting my menus lately. We made a fantastic dinner tonight, entirely made up out of our heads.

Apricot Meatloaf: Ground beef, diced apricots and onions, and all sorts of spices. Cinnamon is amazingly good with meat. We put apricot jam on top and let it bake until it was caramelized. Mmm.

Spiced Orange Sweet Potato: We baked sweet potatoes and mashed them with milk, a teeny bit of butter, orange juice concentrate, cinnamon and a smidgeon of cayenne pepper.

A few days ago we made another amazing dinner, hooray for the discount market in Lansing that has such fantastic meats for incredibly cheap prices.

Scotch Glazed New York Strip Steaks: We seared the steaks with cinnamon, chives, salt, papper, parsley, garlic powder, and onion powder, took them out and deglazed the pan with some very nice Scotch and apple cider vinegar. They were perfectly cooked and insanely tender. We had them with really simply done peas and it was just right.
